Poached Cod with Salsa Verde Recipes
- 4 Cod Fillets
- 2 Tomato
- 200g Parsley
- 1 ½ Lemons
- 100g Sundried Tomato
- 10g Capers
- 10ml Vegetable Oil
Poached Cod With Salsa Verde Preparation Method
1. Pre-heat your oven at gas mark 6, lay the cod in a deep oven tray, season well & add a large sprig of parsley and a slice of lemon then pour in enough water to submerge the fillets in a couple of cm of water, now cook in the oven for 12-15 minutes.
2. While this is cooking finely chop the parsley, roughly chop the capers, finely dice the tomato’s and set aside.

3. Zest 1 lemon and squeeze the juice from it then combine the juice and zest with the tomato`s, parsley, capers, vegetable oil & a generous helping of the oil from the sundried tomato, season & mix well.
4. When the Cod is cooked remove them from the oven and the tray making sure to drain any excess water and place on a plate with a large spoon of your salsa Verde, serve with new potato and green beans, finish with a slice of lemon.
